Got a sweet tooth? Then this recipe is definitely for you. Why? Because dates are one of the best natural sources of sugar you can possibly find. While they are calorie rich, they're also packed full of a huge list nutrients, and hence, the health benefits of this little fruit with a pip is gigantic! When you eat dates, you know for a fact that you fill your body with goodness - vitamin A and beta-carotene for eyes and mucus membranes, vitamin K for your skin and bone metabolism, antioxidants known as 'tannins' for anti-infective, anti-inflammatory and anti-hemorrhagic properties, lots of iron to increase the oxygen carrying capacities of your red blood cells (and to assist with anemia!), and potassium to regulate body fluids and control blood pressure. Not only that, but dates are an excellent source of minerals such as calcium (essential for bones and teeth, muscle contraction, blood clotting, and nerve impulses), manganese (nerve and brain functions), copper (red blood cell production) and magnesium (bone growth). Because it's also a good source of dietary fiber, it flushes out chemicals in the gut, creating bulk and therefore works as a laxative. The upside to this is also that it reduces the absorption of LDL cholesterol.
Fruits, vegetables and nuts make the basis of a well balanced raw regime. And what better way to combine these three elements than in flavorful apple, fennel bulb and cashew gourmet salad! This colorful recipe, infused with stunning aromas of oranges and freshly chopped herbs, makes for a delicious and exotic lunch or dinner.
My friend, Megan, has joined me on the raw food journey and has been the main inspiration for this decadent dish. She was also a great help as we prepared our layers of cream, blueberries, and bananas. We created this as we went, having only her grandma's blueberry banana pie to replace with an organic raw version. This pie will definitely now be in the rotation of delicious raw desserts and introduced to granny of course! For more recipes visit my recipe blog http://amandanicolesmithrecipes.blogspot.com/
This dessert is a great way to enjoy actual cake that is not only healthy, but delicious as well!
The main ingredients in this cake are carrots and pecans. Carrots offer a multitude of health benefits. In fact, it is one of those vegetables that just can not do any wrong because just a few carrots per day can offer such a boost in anyone's health, despite their condition...
Summer tarts are wonderful dishes that can easily make for a nutritionally dense and satisfying main course. While many versions can be made by using additional ingredients, my favorite is the invigorating and scrumptious spinach tart with marinated tomatoes! Made with cashews and almonds, this nutty tart can provide significant amounts of healthy fatty acids that can sometimes be lacking in an exclusively vegan diet. Cashews, for example, are loaded with minerals, including magnesium, manganese, phosphorus, iron, potassium and zinc.
