Braggs Replacement

kminty3kminty3 Raw Newbie

I’m wanting to eliminate braggs because I know the soy is not good for my thryoid. Anyone have a good system for replacing it in recipes? Particularly, has anyone got a good system down for making Matt Amsden’s famous onion bread without it? I love that recipe!

Yes, Zoe has a replacement for nama shoyu using mushroom! Search here for May 16, 2008 post.

However, I would like a replacement for it without using mushroom.

  • HMMM I am glad I saw this but the only thing, I don’t eat salt. I wonder what this would be like without the salt or could you use dehydrated celery instead…

I never thought of dehydrating celery – do you juice it & dehydrate the juice? & in what kind of container?

That onion bread recipe doesn’t actually need the braggs, it tastes really great without it. Just add a little salt instead. I think the braggs would overpower the lovely taste of it anyway, dunno why people use it all the time!

my feeling is that people who don’t eat salt lose the taste for it. you probably don’t need to add anything. otherwise, the soak liquid from dehydrating and soaking mushrooms works nicely as a braggs substitute.

  • I usually just dehydrate the leaves left over from my celery. When you grow it yourself or buy it organically locally there are a lot more leaves then the store bought version.

It doesn’t really taste like salt but gives the appeal of seasoning when you need it.

  • Thanks pianissma

I use unpasteurised miso but I know not everyone is ok with this. The juice from soaked mushrooms with some kelp or sea salt added sounds like it would be like braggs.
