Can coconuts be freezed and then later defrosted?

In my area, the young coconuts have gone up in price - almost $3 a coconut! If I were to buy in bulk from Whole Foods, I get a discount, but I'm not sure if I would use up the coconuts fast enough. I've heard of people freezing them, but does this destroy any of the minerals/nutritional value in the meat and water when later defrosted? Is there anyone out there who does this?? Thanks! The help is much appreciated! :)
