Cheap and easy
I'm still wanting to go raw, but am having problems with breakfast and lunch. I figure for dinner I can eat salad for now until I get more familiarized with everything. I need to find something that is cheap to make since right now we are on a really tight budget. I thought about a couple bananas for breakfast each morning but I'm trying to figure if they is anything else I could do....maybe just stick with a piece of fruit each morning? I can't really do smoothies cause I am the only one up when I get ready for work and don't want to be blending when everyone else is asleep. For lunch since I am out on the job I thought about taking Raw Revolution bars with me but at almost $2 a bar that isn't a very cheap option. I thought about salads but don't really want salads for lunch and dinner.
If anyone does a cheap breakfast(besides smoothies) or lunch(besides salad) please let me know. Just trying to get some ideas and hopefully get this thing going! haha
You can make your smoothies before you go to bed and freeze them.
In the morning, take it out, and by the time you're ready to head out it will be at the right consistency for you to drink it.
I'd also suggest looking for Jennifer Cornbleets' "Raw Food Made Easy for 1 or 2 People".
In it, you'll find wraps, "sandwiches", and other dishes that don't require a lot of time.
I don't think she even uses a dehydrator.
Try this one, from her book:
Veggie Sub Sandwich
2 large romaine lettuce leaves
1 cup alfalfa sprouts
1/2 ripe avocado, sliced
1/2 Roma tomato, slices
6 thin slices onion
1 tbs Lemon Herb Dressing or Ranch dressing (or dressing of your choice)
Arrange the sprouts, avocado, cucumber, tomato, and onion on one leaf of the romaine. Drizzle with the dressing. Put the second romaine leaf on top. Serve immediately.
Lemon Herb Dressing
1/4 cup fresh lemon juice
1 tbs minced fresh herbs (parsley, basil, dill, mint, tarragon, or oregano)
1/2 t crushed garlic (1 clove)
1/4 t plus 1/8 t salt
1/4 t Dijon mustard (optional)
Dash black pepper (optional)
1/2 cup extra virgin olive oil
Place the lemon juice, herbs, garlic, salt, mustard and pepper in small bowl and whisk to combine. Add the olive oil and whisk again until well blended. Store in a glass jar in the fridge. Lemon Herb Dressing will keep for 5 days.
1 cup soaked raw cashews
1/4 cup water
2 tbs fresh lemon juice
1/2 t garlic powder
1/2 t onion powder
1/4 t plus 1/8 t salt
1 tbs minced fresh basil or 1 t dried
1 tbs minced fresh dill weed or 1 t dried
Place the cashews, water, lemon juice, garlic powder, onion powder, and salt in a blender and process until smooth and creamy. Add the basil and dill weed and pulse briefly, just to mix. Store in a sealed container and refrigerate. Keeps for 5 days.
Have you browsed through the recipe section here on the site? It's chock full of ideas. There are tags (like "breakfast") that will pull up a whole list of ideas.
I would say to just eat lots of fruits that are prefferably on sale during that week. I do find by just consuming two large fruits salads in the begging of the day and about 15 delicious honey dates in the morning. Fruits can very inexpensive if you know when and where to buy them; just make sure you are not buying non organic fruits that are known to be heavily sprayed with pesticides > such as apples, pears, nectarines, strawberries, and sweet bell peppers.
