favorite knife?

do you have a favorite knife?

i want to buy a good chef's knife but can't decide which one to buy.

i know every ones are different but makes me wondered what kind of knives people are using.

i'm thinking about shun, global or wuthof, maybe 9 or 10 inch!

anyone used them before?

    Well I dont have any professional knives, but I have a couple knives that I use daily from the kitchen collection. About 10.00 a piece, stainless steel and are super cute colors. Lately ive been thinking of buying a better knife myself so I look forward to reading what others reccomend.

    I have both shun and global and have found that shun's quality is much better. The craftmanship is just superb. I used to have wuthof too, but among these three, I would highly recommend shun. It makes chopping vegetables a fun activity.

    I have a Cutco set and they are AMAZING!!! They will cut through anything, I swear. Even if you just buy one knife, you would love it.

    I'm pretty sure you can find these on Ebay if you want to spend a lot less on them.

  • In my experience, the only thing that really matter is that the knife is stainless steelm so that none of the metal gets into your food. Beyond that one (or, at least, I) can pretty much make do with whatevers available...in other words, I wouldnt worry tooo much about it.

    i looked amazon and seems like shun is a great knife, but are they difficult to sharpen?

    i had a chance to use cutco's knives before and i loved them too, but i just didn't want to deal with there special way to sell knives...

    i wasn't thinking about to look at ebay, thats great idea!

    i have a 6" ceramic knife and i think this is a good knife but maybe because the size(littel too short for me) and i think i'm little afraid to use them feel like i need be super careful with this knife to not drop(i mean i won't drop any knives but i don't wanna worry about it) or i won't crush garlic etc......i need my knife to be strong for a everyday use.

    Ihanks, emtpdmom... I guess I never added any "favorites" because I just use "Track". Still can't seem to figure out how to view ONLY my "favorites", but I'll get to that, eventually. Thanks!!!

    I don't think Shun knives are particularly difficult to sharpen. If you would like to use professional service, however, I recommend this site:

    They really know about Japanese knives. I had them sharpen my Global knife once and they did a pretty good job.

    By the way, I also own Cutco knives but rarely use them because I love my Shun knife so much. There is no doubt that Cutco knives can chop just about anything. They do so by making their blade super sharp. I don't remember how many times I cut my fingers (and almost chopped them)! With Shun knife, I almost never cut my fingers. Shun makes chopping veggies a breeze by producing a high quality blade rather than making it super sharp. The difference in the craftsmanship between these two knives is obvious. Sorry, joannabanana, I don't mean to offend you. It's just how I feel about these knives based on my experience.

  • I found a pink knife at Target for $10. I only bought it because it was cute, but it actually works better than any knife I've ever had! Go figure...

    i went to william sonoma and tried shun, global, wuthof.

    then bought a shun 10" chef's knife, yay!

    i'll send my knife to the place you recommend, so now i can just enjoy chopping vegetables everyday!

    i used cuisinart and calphalon's knife at friends's house recently and they are actually pretty good, it was sharp, okay balance, good price.

    i use nakiri knife at home and loves them (i never sharpen them before in 5 years and they are still super sharp, bought them in japan has name on it says "seki") but i just love 10" chefs for long hour job.

  • I bought a "Santoka style" knife at Walmart that is easy to work with and a month ago I bought a "Cai Bao" knife for thinly slicing vegetables at UBAW.com that I use a few times a week, it seems safer that using slicing gadget machines.

    I got my knives at target too! Only mine are green :)
