Holiday Dishes

I did a search for recipies under holiday and didn’t see anything that is quite what I am looking for, although all the dessert recipies look SUPER yummy! Thanksgiving and Christmas are my two favorite food holidays and I know that not eating them will be a loosing battle if I don’t have alternatives. I am looking for recipies for my favorite dishes which are:

1.) Stuffing of the breaded type and not a rice based stuffing. (Mine was typically made with bread/corn bread, celery, onion, peppers, and turkey drippings. I love this stuff so much I would eat it with just gravy and cranberry sauce for days afterwards.)

2.) Gravy (preferably not mushroom)

3.) Cranberry Sauce (I always make mine from scratch and assume I can just soak and puree and add raw agave, but would love guidence)

4.) sweet potato cassarole (which is typically topped with marshmallows and then baked)

5.) Potatos au Gratin

6.) Turkey alternative (Open to anything really)

7.) Greens (of course I know I can just eat raw greens, but was hoping for something a bit more like the cooked version).

I am thankful for anyone who can point me in the direction of any of these recipies. Thank you! (I apologize if this has already been covered.)

    I’ve been working on a stuffing recipe that I plan to perfect this weekend. My mom’s recipe was bread based but she uses apples and raisins. Once I get it figured it out I will post it. You can always substitute onions, peppers, etc. for the apples and raisins.

    here is my menu for thanksgiving, its my first raw thanksgiving! i’m not trying to match a traditional menu, but going for i’m going for rich and savory foods, many of the recipes i found here.

    wild mushroom stuffing

    sweet potato souffle

    hummus and crackers

    pesto stuffed mushrooms

    raw crab cakes

    quinoa stuffed peppers

    apple sauce

    spinach salad with walnut, green apple and vanilla vinagrette

    apple streudel

    nuttgirl, most of what i’m making, with the exception of the stuffing, crab cakes can be made without a dehydrator.
    i actually use my toaster oven, it goes all the way down to about 80 degrees!

    i started sprouting today and also preparing because i don’t have a dehydrator, only my trusty toaster oven. i’m doing it alone, my partner has no interest in raw food, but one of my best friends is coming over for the raw feast.

    yum yum sylistchick! my menu is a suppliment to a non raw thanksgiving im attending in AZ with decidedly non raw meat eating friends( with open minds im might ad!)Im fixing: Stuffing( ani phyos burger recipe always tasted like my moms raw stuffing teehee) parsnip whip with gravy, cranberry orange sause/salad, pesto mushrooms, marinated tomatoe fennel tarts, and pumpkin pie. Im also taking raw goodies with me for them to try like brownies, lemon maccaroons onion bread and flax crackers. oh and some eggplant chips. ill be taking some wraps for me to make “sammies” out of too as they are big lunchtime sammy eaters! Im looking forward to this trip but in Dec i go to KY to visit folks….sigh there i have to where to wear my vegan tee that states: ” no I dont eat meat , yes i get enough protien,no these shoes arent leather , yes i have a life” haha they are good family but threatened by different so unfortunately they are still in the “sneer” stages, and undoubtedly my grandma will say something of mine she tried upset her stomach…but its a every three year kinda thing so i think ill survive it! teehee HAPPY THANKSGIVING EVERYONE!

    My husband is making a raw pumpkin bread from welikeitraw.com …we’re going to be tasting it tonight. Carrot Spice Bars are a good ‘holiday’ desert which require no dehydration at all… just a good food processor. I’m sure there are recipes similar to that on GoneRaw (I know I’ve seen them)... but, this recipe comes from the book Healthful Cuisine by Anna Maria Clement (PhD NMD) and Chef Kelly Serbonich. Created by the Founders of Raw Food Cuisine – Hippocrates Health Institute. It’s yummy! Maybe too sweet for some.

    This is a good topic, because I want to make a non-dessert dish for the other potlucks…

    stylistchick, that’s great about your toaster oven… What brand is it? I’d love one like that for just “warming” up food… because my dehydrator is too big for a small task. Hmmmm, I wonder which would be more energy efficient. Plus, for the people (I know) who want a toaster oven… that would be a great one to start with and still introduce them to raw foods.

    my aunt and mom asked themselves one year why they needed to cook the cranberries to make sauce… this is a chunky version that has been a staple at our feasts ever since (way before i was raw)

    we mix and taste as we go along, but the ingredients are as follows:

    dates
    cranberries
    (you’ll want a little more cranberries than dates, but again, depends on how sweet you like it)
    orange zest
    orange juice

    in a food processor, process a small amount of dates to cranberries (say about a cup each) with a little zest and OJ till chunky. remove, taste, decide if it needs more___ and add to next batch. process THAT batch till smooth and incorporate with last batch. this ensures a nice “not too smooth, not too chunky” texture.

    omshanti- love the ani burgers/stuffing idea. i’m going to do that! do you have RECIPE for the tomatoe fennel tarts???

    oh and curlysparkle- marinating greens in something yummy like citrus and olive oil, or a creamy nut dressing will result in a “cooked-like” texture, or just tossing in oil and salt and pepper. you can even marinate in the dehydrator.

    Has anyone made this? I’m on the fence of doing a raw nut loaf or stuffed butternut squash (vegan, cooked). I’d rather have a raw entree though

    Mock Turkey Loaf

    from Alissa Cohen’s book “Living on Living Food”

    1 Cup Pumpkin Seeds
    1 Cup Cashews
    1/2 Cup brazil nuts
    1 Scallion (green onion)
    5 Celery sticks
    1 teaspoon sage

    Run the nuts through the food processor with the
    “S” blade until finely ground. Add remaining
    ingredients and continue to process until the
    ingredients are well mixed together.

    Remove from food processor and place on large
    plate. Form into a loaf. Top with cranberry sauce.

    We have fun with this dish on Thanksgiving day.

    1/2 pound almonds, soaked overnight if possible
    1/2 pound walnuts, soaked overnight if possible
    1 pound carrots, finely grated
    1 medium onion
    1 Tablespoon raisins
    1 Tablespoon oil
    1 Tablespoon caraway seeds, ground
    1 Tablespoon Italian Seasoning
    Sea salt to taste

    Combine all ingredients and put through a champion juicer with the blank
    plate in or mix in a food processor. If the mixture is not firm enough, add
    one or a couple of the following thickeners: dill weed, dried garlic, dried
    onion, dried parsley flakes, nutritional yeast, psyllium husk powder, ground
    flaxseeds.

    Form into drumsticks, sprinkle with paprike or ground black pepper before
    serving.

    Renoir~ You have been a very busy poster. :) Thank you for your time and effort. The bread recipe looks like the closest raw recipe to bread that I have seen. Way cool! I’ve been “stuck” about the bread thang. :) And, thank you for answering the coconut butter vs oil question. I have one of them in the fridge… I got it for the chocolate recipe. :)

    piannisima, the crust require dehydrating but i got the recipe from the raw chef blog:
    Crust is: 2C brazil nuts, 1/2C pine nuts,2TBLSP flax meal,2 TBLSPitalian seasoning ,1 clove garlic 1TBLSP nutritional yeast olive oil blasamic vinegar, 1/2 TSP salt and water as neede to make dough, dehydrate for two hours in tart tins then remove and dehydrate 6 hours till firm. the tomatoes need to be marinated overnight in oil ad basil and salt the fennel in oil namashoyu and agave then each item needs to be dehydrated for an hour or so and put into tart shells to serve toppe with “parmesan” cheese made of macadamias and some basil chiffonade…viola! ive tasted parts of it as i made it and its heavenly!!!

  • bluedolphin – I hope you like the bread. My new favorite late night snack is cinnamon toast. I throw a piece of the bread back in the dehydrator for a few minutes, spread on a little “butter” and cinnamon and yum!

    Yes, I was a posting maniac last night! I wanted to get the recipes up early enough for people to be able to use for Thanksgiving.

    i have an oster toaster oven, it goes way down.
    the lowest number setting is 150, but from there down, its notches, so i estimate, but it really works fine, since i’m preparing for one most of the time, i don’t need alot of dehydrator space.

  • So I have been in my mom’s kitchen since yesterday, preparing my raw thanksgiving dishes in the hopes of avoiding the cooked food temptations… so far so good. And then today, my dehydrator died! :( just kaput, no longer functional. I only got it 2 months ago so I plan to try and return it. Luckily almost everything was ready except I had cookies in there when it died. And then, once I was done preparing all of my raw food, the cooked food comes out that makes me feel like home. I’m trying hard to resist, but I don’t know if I can make it all night!! I even told my mom to purposely use real eggs and butter in her stuffing since I made the raw version and don’t want to be tempted and to put bacon in her green beans so that I won’t want them!!
