How would one find out the calorie/protein/fat amounts in sprouted seeds and nuts?

I have looked around on the internet and cannot find anything except “75%-25% fat to protein before sprouting, 25%-75% when sprouted”. I am not that good at math and it doesn’t seem like a very reliable formula anyway. :D
Does anyone have any insight on this subject? I have been tracking my food intake on thedailyplate.com and I don’t quite know how to log sprouted sesame seed cheese…
I am
mostly interested in seed values, but nuts would be interesting to read about, too.
