Very new to raw. Living in another state without my own kitchen stuff and lacking a lot for what is needed for this diet (utensil wise) but doing my best for a few more weeks. I asked about substitution for coconut and had two suggestions. Now I am wondering what can be substituted for zucchini when making pasta dishes. It tastes delicious but reeks havoc on my stomach. Even when I use digestion helpers. Thanks.
cucumber, eggplant?, carrot sliced with a potato peeler, and kelp noodles (not everyone likes these, and depending on the brand they are crunchy). If you are feeling adventerous, you may even try peeling the stem of broccoli and using that, but it's crunchy.
