Processing Fresh Olives?

My tree is groaning with beautiful black kalamata-style olives and I have tried to process them four times and four different ways and ended up with mouldy inedible messes after a lot of time and work…. Please, does anyone have a fool proof delicious recipe?? NB have found Ofek’s Sun Olive recipe and am going to try both versions with a small quantity but think that I have tried something like this once before…..
