sushi 'rice' idea

I made the roasted red pepper soup from this site, but made it a bit too hot for me to handle. So i thought, what could dilute this down? I got a cauliflower and processed it until kind of like ‘rice’ and put the soup on that (which was really good BTW and worked) but then i got thinking, this ground cauliflower would probably work really well for sushi ‘rice’. I think i want to try it sometime. I’m still pretty new to being raw, so i wondered if anybody had any ideas of other things to mix in it. I thought about the raw soy sauce, but i hear it’s not really raw. Anybody have any ideas?

    How about a bit of rice vinegar and sesame seeds, and roll up in a seaweed sheet?

    Cauliflower has a really high water content. I have been making couscous with it and it’s obviously much wetter than cooked couscous would be. I think it will work as “rice” for sushi rolls, but you will definitely have to line your raw nori (seaweed) with something dry, like baby spinach leaves or another type of lettuce/green that is completely dry. Trust me, if you put something wet on the nori, it will turn into mush, particularly if your nori is raw. I like the idea, though. Jicama or daikon (giant white) radish would work too, I’m sure.

    You might also want to squeeze out the excess liquid from any of the “rice” options with a cheesecloth. It will help the sushi rolls keep their shape, once they’re assembled. Good luck!

  • I’ve used before parsnips and a turnip. I didn’t think it was wet enough, that’s why i thought cauliflower would work because it was more wet. The nori sheet didn’t seem to work the same as it did when i made sushi with rice toasted seaweed. Maybe i’ll just have to experiment with this. I’ll try the spinach and the rice vinegar/sesame seeds (good idea) Thanks!

    No, it isn’t raw. The only raw vinegar I know of is Apple Cider Vinegar, but you’ll have to make sure you find one that is actually raw and organic. Bragg’s makes one, but there are other companies as well. Apple Cider Vinegar is a lot more intense than rice vinegar. If you decide to use it instead, use a lot less and taste until you are happy with what you’re making. You can always use lemon or lime juice, too, but they are also very acidic. Keep sampling until you find a subsitute you like.

    turnips, jicama, also make good rice. We’ve added shredded apple before and it has been nice too mixed in with the base ingredient.

  • actually, it is the creamy red pepper soup from here, sorry i thought it was roasted. I made the spinach soup on here too, and also had to add cauliflower to it. I think it’s the texture with the soups i’m having a problem with. It’s kind of frothy. for the red pepper soup, i used cayenne instead of the jalipeno.
