Ston(e)y Mango Leathers with a Dash of Indian Flair

Makes 8 small strips

Ahh… fruit leathers. A deliciously wise way to preserve the summer harvest and easily get your five-a-day while travelling. I chew mindfully at their sheer genius…

Ingredients: 

¼ cup chopped mango (i.e. a large handful)
1 large banana , very ripe,
1 teaspoon mace (can be substituted with nutmeg), or to taste
6 dried apricots, soaked 15 mins in slightly warm H2O

Preparation: 

Blend all ingredients, adding the mace last. Spread onto dehydrator tray and dry at between 110-115, depending on your personal temp limits. After about 8 hours, flip and dry for another 6 hrs. score into eight small strips, and enjoy! Very fast, very low-maintenance, very tasty…

oh, and I would say one small avocado or half aof a very large one would do as a banana substitute

oh, woops... cherimoyas are highly seasonal and won't be around until November :(. I actually realized that avocados would also probably work, but you might add two or three teaspoons of agave or honey to compensate for the avo's lack of sweetness. much apologies for leading you astray...
...btw: how is seattle; i've always wanted to live in the pacific northwest, and i know there's a fairly strong foundation of raw veganism up there...

The banana does give the truly leathery texture, but if your feeling exotic and have access, a the creaminess of half of a cherimoya would work beautifully. If you're alright with a crispier texture, add some more mango in place of the banana. Hope this helps!

Can I do it without the banana? husband is allergic. I have 6 apricots on the counter right now!
