Pinenut Caesar Dressing

Yes you can be RAW and still eat a caesar salad!!!

Ingredients: 

4 garlic, small cloves or 2 large
½ lemon or lime, juiced
.33 cup pinenuts
olive oil, drizzle
sprinkle sea salt, pink
water, for consistency

Preparation: 

In your food proccesor or blender, chop garlic, then add in pinenuts and your lemon or lime juice. Pulse until creamy adding very small amounts of water if needed. Add sea salt to taste. ENJOY!!! You can sub almonds as poinenuts can get pretty expensive…I like them though, I find they add an interesting flare!

Weighing in late but wanted to say that I L.O.V.E. this recipe and so does my non-RAW DH. This is our "house" dressing now. I often add some dulse into the salad too to give it that "sea" taste. Well done!!

I just made myself another salad because of this dressing! It is so creamy and good! I made enough this time to last me for awhile (a whole bottle). This time I left out the braggs and just used more salt. It tastes more like Ceasar dressing now. The Braggs made it taste like a totally different dressing. I like both.

To cir1976...I don't think you HAVE to soak the pinenuts. It's just that soaking any raw nut makes it more digestible and makes the nutrients more available. It also seems to make blending the nuts easier. I soaked mine for 1 hour and they became very creamy.

Your dressing...that's what's up!!! Ceasar dressing that's eggless..vegan..I don't have to miss ceasar dressing anymore now ;-) Thank you mmmorgans! P.S. It emulsified very well for me. Perhaps because I didn't add a whole lot of water. But I did add less garlic, more lemon juice, and some braggs liquid aminos in place of the salt..yummy!

silent_advocate- I use lime, it is great, start off with juice from 1/4 lime and add more, I find the lime juice to be much stronger

4 cloves of garlic..... i thought my tongue was going to fly out of my mouth... definitely wayy too much! but when i added more pine nuts/water/oil, it turned out really well!

Thanks for the recipe. I was just thinking I wanted a new creamy garlicky dressing.

I bet this would taste good with brazil nuts, too.

Any nut would work! Just be sure to choose something that is not terribly strong in flavor as it may over power your dressing!

Is there any other nut that can be used? I'm not a big fan of pinenuts.
