Almond Power Bar

Almond Power Bar
4.6
Average: 4.6 (5 votes)
Servings:
makes 20, 2x2" bars

Adapted to be raw from a recipe I found from elanaspantry.com. It was mostly raw to begin with; actually a lot of her recipes seem to be that way. Anyway this recipe was so good I had to share it here!

Ingredients:

2 cup almonds
½ cup flax meal
½ cup dried, shredded coconut
½ cup almond butter
½ teaspoon sea salt
½ cup coconut oil
2 tablespoon agave (more or less, to taste)
1 tablespoon vanilla (yes, that's a TABLEspoon!)

Preparation:

Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor
Pulse briefly, about 10 seconds
In a warm dehydrator, ‘melt’ coconut oil.
Stir agave and vanilla into oil.
Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste.
Press mixture into an 8×8 glass baking dish
Chill in refrigerator for 1 hour, until mixture hardens

Remove from refrigerator, cut into bars and serve.

Note: the picture is from the original recipe, which calls for melted chocolate to be spread on top… I just leave the cocoa out of mine but I’m sure you could stir in some nibs, if you wanted it chocolatey! Also, the picture is of Macadamia Nut Power Bars – for which you simply substitute macadamia nuts for almonds and raw macadamia nut butter for almond butter (I haven’t done this but it was suggested on the original recipe)! Enjoy!

Ditto, Frenchy! I found they don't stay together well unless eaten straight from the fridge. Even though I take my lunch in an insulated bag with an ice pack, the bar was still very crumbly by lunchtime. Tasty, but crumbly! :)

this sounds great, do you know the nutritional content? like the calories, fat, fiber?

Oh, flax meal is just finely ground flax seeds - I use an old coffee grinder to grind them up into a 'flour' (it takes about 1/3 cup whole seeds to make about 1/2 cup meal). Also, the 10 seconds in the dehydrator is just to 'melt' the coconut butter. You could just set it in the sun somewhere and it should liquidize pretty quickly. Good luck!

Wow that looks&sounds amazing! just a few question though, whats flax meal ? and how important are those 10 seconds In a warm dehydrator? because I have no dehydrator..

Soak the nuts? I usually soak my almonds for 8-12 hours with a pinch of sea salt, and then I dehydrate them to make them crispy again.

This looks fantastic. How many hours did you soak the nuts?
