Renee's Crisps

3-4 dehydrator trays

Gorgeous, moreish sweet potato crisps from Living Cuisine by Renee Loux Underkoffler.

Ingredients: 

3 cup shredded sweet potato
¼ cup lemon juice
2 cup flax seeds, soaked for 1/2 hour
1 cup almonds, soaked
1 cup red onion, chopped
1 clove garlic
1 tablespoon dried rosemary
1 tablespoon dried thyme or savoury
1 tablespoon coriander seeds
1 teaspoon salt

Preparation: 

Soak the sweet potato overnight or for 6 hours in the lemon juice and enough water to cover it.After six hours, or overnight drain and rinse thoroughly.
Then take all the ingredients, mix and then put through a Champion juicer using the blank plate, or process in your food processor, may have to do it bit by bit.
Spread thinly on dehydrator trays, dehydrate until dry, flip and continue until crunchy and crisp.

This is really wonderful. I blended it all in my blender and added a lot of water, spread it thin and it made a beautiful, tasty crazy, perfect for soup! Really delicious! Thank you

Zoe - You've posted another winner! My whole family loves this (even my caveman non-raw husband). I spread your delicious Cheese with Spring Onions on it and I am in heaven, but these are really good all by themselves. I had them with guacamole last night and mmm'd my way through it. Yummmmmmy! FILLED my 5-tray dehydrator, so it makes a lot, but you'll want a lot.

Yes, you need the flax seeds they are a "must have" for this one.

These look really good! Does lemon juice work in a similar way with other starches like corn? If I omit the flax seeds will that make it no good?

I made yam chips once and did not de-starch it. I found it very hard to digest.

It gets rid of the starch out of the potato and makes the crisps crispy. I have done it without de-starching and it was still OK.

This sounds like a perfect recipe for me to try. I have all of the ingredients except the sweet potato. What effect does soaking the potato with lemon juice have? Thanks! =)
