Brazil Nut Chocolate Ice Cream

Makes 6-8 Cups

This is a HEAVENLY ice cream! Luv says it tastes like the Brazil Nut Chocolate Gelato that she tried at Whole Foods before we went RAW. Very Yummy! Hope you like it.

Ingredients: 

2 cup Brazil nuts, soak over night (10-12 hours) drain and rinse well
1 cup Sesame seeds, soak over night (10-12 hours) drain and rinse well
3 cup Coconut water, drain 2-3 young coconuts
2 teaspoon vanilla
1 cup Raisins, place in jar and fill w/water to 2-cup mark. soak at least 1 hour
2 pinch kelp
2 pinch salt
1 Young Thai Coconut, Just the meat - not too young
3 tablespoon raw cacao nibs or powder
4 medjool dates, remove pits

Preparation: 

In a Vitamix or other High Speed Blender Blend together the first 7 ingredients (nuts thru salt). Strain the nut/seed milk. Put the milk back into the blender and add the rest of the ingredients & blend well. Make according to the instructions on your ice cream maker. Or if you don’t have one, then freeze in ice cube trays & blend up in your blender or food processor when frozen. Enjoy! P.S. This is also a really delicious beverage, if you don’t want to freeze it!
