Makes about 4 cupsMy seeds are a lot less expensive than my almonds and it’s nice to change it up a bit!
Ingredients:
¾ cup pumpkin seeds, soaked
1 tablespoon raw agave nectar
3½ cup water
½ teaspoon vanilla (not raw, I know) or achunk of vanilla bean
Preparation:
Blend pumpkin seeds with about 1/2 a cup of water until very smooth. Add agave, vanilla and the rest of the water and belnd again. strain through cheesecloth or a nut bag (I just use a kitchen towel; I don’t have either!)
