Delicious, juicy, sweet and ligltly spicy. I found the idea to sprinkle curry powder over tomato and mango on a french non-raw blog (http://drole2bouffe.over-blog.fr/ ). Then I invented this recipe around this idea, adding a vinaigrette and fresh basil.
2 large tomatoes, cut in nice big pieces
1 mango, peeled and cut in pieces
1 tablespoon lemon juice
2 tablespoon orange juice
1 tablespoon olive oil
¼ teaspoon curry powder
1 pinch salt (optionnal)
freshly ground pepper (optionnal)
5 fresh basil leaves, chopped
calendula petals for garnish (optionnal)
Put the tomatoes and mango on a plate, mix the vinaigrette ingredients together (lemon and orange juice, olive oil, curry powder, salt, pepper, basil) and pour over the tomatoes and mango. Garnish with more fresh basil and some calendula petals if you are lucky enough to have some.
