Adapted to be raw from a recipe I found from elanaspantry.com. It was mostly raw to begin with; actually a lot of her recipes seem to be that way. Anyway this recipe was so good I had to share it here!
2 cup almonds
½ cup flax meal
½ cup dried, shredded coconut
½ cup almond butter
½ teaspoon sea
salt
½ cup coconut oil
2 tablespoon agave (more or less, to taste)
1 tablespoon vanilla (yes, that's a TABLEspoon!)
Place almonds, flax meal, shredded coconut, almond butter and salt in a food processor
Pulse briefly, about 10 seconds
In a warm dehydrator, ‘melt’ coconut oil.
Stir agave and vanilla into
oil.
Add coconut oil mixture to food processor and pulse until ingredients form a coarse paste.
Press mixture into an 8×8 glass baking dish
Chill in refrigerator for 1 hour, until mixture hardens
Remove from refrigerator, cut into bars and serve.
Note: the picture is from the original recipe, which calls for melted chocolate to be spread on top… I just leave the cocoa out of mine but I’m sure you could stir in some nibs, if you wanted it chocolatey! Also, the picture is of Macadamia Nut Power Bars – for which you simply substitute macadamia nuts for almonds and raw macadamia nut butter for almond butter (I haven’t done this but it was suggested on the original recipe)!
