This raw pad thai is my new favorite creation! Now that I have a spiralizer, I'm going to town with it : )
For Noodles:
2 medium zuccinis
1 carrot
Top with any veggies you have around!
I used:
2 pieces green onion
1/2 cup portabella mushrooms
1/2 cup
cauliflower
1/2 cup mung bean sprouts
For Sauce:
2 tablespoons sesame tahini
1 tablespoon lime (or lemon, or
vinegar)
2 tablespoons tamari (or soy sauce)
garlic (to taste)
ginger (to taste)
Use a spiralizer (or mandoline, or peeler) to create your noodles. Add in veggies of your choice then top with the sauce. It tastes even better after it sits to soak the flavors the next day. Enjoy! : )
