A fool is just pureed fruit stirred into cream.
I haven't included quantities, since you can make as much or as little as you like, and vary the proportion of mango to cashew cream to suit your tastes. I eat a lot of fruit, so mine was 2 small mangoes, and 1/2 a cup of cashews, just for me.
* raw cashews
* fresh lime juice, to taste
* ground cardamon, to taste (optional)
* fresh mango, peeled and de-stoned - reserve a little to cut into small dice to top your dish with
Place your cashews in a high-speed blender and blend with just enough water to get a thick cream texture. Blend in lime juice and cardamon, if using, to taste - you just want a hint of the flavours getting through.
Using a spatula, scrape the cashew cream out of the blender, & into your serving dish/es. You don't need to clean the blender - it's OK for some of the cream to be blended in with the mangoes.
Next, add your peeled mango, except for the reserved portion, to the blender, & blend. Pour the mango puree into your serving dishes too, and swirl the mangoes and cashew cream together a little - looks pretty! Top each dish with a few of the reserved mango dice and serve.
