Mom made this for my last birthday. It was YUMMY!
Crust
2 cup Pecans or Walnuts, Chop in food processor. (Soak for 12 hours, rinse well and dehydrate nuts to remove phytates and improve digestibility.)
12 Medjool Dates, remove pits
½ teaspoon
Cinnamon
Filling
2 cup Strawberries, Wash, dry and remove stems.
1 cup Walnuts, Macadamias or any nut you like
12 Medjool Dates (Use 6-12 depending on how sweet
you want it), remove pits
Topping
1 cup Strawberries, Wash, dry, remove stems and slice.
Crust: Put nuts, dates and cinnamon in food processor and process until slightly sticky. Press into pie plate and chill.
Filling: Put Strawberries, Nuts and Dates in food processor or blender and process until smooth. Pour into crust. Decorate with remaining Strawberries and chill for several hours. ENJOY!
