This is a great way to use up leftovers and is surprisingly delicious. Get creative and experiment! My wrap filling was a mix of leftover sprouted quinoa, veggie salad and an avocado. With a big juicy tomato on the side to finish off lunch, your tummy will thank you!

Sea salt and pepper to taste
Mix your leftovers together with the avocado, spoon onto one end of the Nori sheet, sprinkle with salt and pepper (and any other seasonings you wish), roll up and enjoy. Make 1-3 wraps per person, depending on how hungry you are, the ingredients you use and what you use as a side dish to serve with it.
