Cheesy Broccoli Soup
I wanted to do something with the broccoli stalk. I was also craving something cheesy. Nutritional yeast is not raw, but I do incorporate it some into my diet because it is high in B vitamins, plus it tastes deeeelicious! : )
The stalk from two heads of broccoli, chopped into round pieces
3/4 cups broccoli florets
1 medium red bell pepper, chopped
1/4 cup nutritional yeast
1 clove of
garlic, chopped
A pinch of Sea Salt (optional)
2-4 tablespoons water
1. In a food processor or high speed blender blend together the stalk and bell pepper. Add water, 1 tablespoon at a time, if needed.
2. Add nutritional yeast, sea salt, and garlic to broccoli and blend until combined.
3. Add 1/2 cup of broccoli florets and pulse just until
combined. You want there to be little pieces of broccoli in the soup.
4. Garnish with remaining broccoli florets on top.
*If you prefer you soup more "soupy" rather than thick, simply add more water. For a creamier version use nut milk instead of water.
