I knew beets were the bomb and spent some time surfing for the perfect raw beet burger - I found several raw and vegetarian recipes - this one I adapted mostly from the addicted to veges and petit chef. I hope you like!
several slices of delish raw onion bread
array of condiments: lettuce, tomatoes, raw naturally fermented organic pickles, thinly sliced red onions, avacado, thinly sliced red bell pepper
raw ketchup
Almond
mayo:
½ cup soaked almonds
½ cup purified water
Juice ½ lemon
3/4 tablespoon
honey
½ tablespoon raw apple cider vinegar
½ teaspoon sea salt and 1/2 teaspoon black salt
2/3 - 1 cup olive oil
Place all the ingredients for
your homemade mayonnaise recipe in a heavy duty blender except the olive oil. Puree the ingredients until very smooth. With blender still in motion, slowly pour a thin stream of olive oil through the opening in your blender’s cover. Continue to puree until you reach the right consistency. thickens further on cooling. Taste and adjust flavors to your liking.
Beet burgers:
2 small beets roughly chopped in food processor (about 1 1/2 cup)
Add:
1 cup walnuts - soaked
½ cup cashews - soaked
lightly
5 sundried tomatoes w 2 T of their olive oil
1 t cumin
½ t celery seed
1 t oregano
3 T
light unpasturized miso
2 garlic cloves
1/8 red onion
2 T nutritional yeast (optional)
1/8 teaspoon chipotle pepper powder
(optional)
Process until mixed and ground evenly, form into 5 patties and dehydrate for 3-4 hours – turning once on mesh sheet,
I was also considering adding ½ cup shredded carrots and ¼ cup chopped raisins to the mix before dehydrating.
