Super easy and good! I made these today and they only need about 2 hours to make.
1 Large or 2 small zuchini, peeled with potatoe peeler
1 Large carrot, jullienned
¼ cabbage, chopped in skinny strips
1 cucumber , peeled
¼ sesame or olive oil
¼ cup sesame seeds (optional)
¼ cup soy sauce, mustard sauce, and or pickled ginger
sea salt to taste
other stuff for inside- red peppers, sunflower sprouts,avocado
Peel zucchini and place on dehydrator rack. Dab with sesame oil and dehydrate for an hour to start. I took three sections and layed them together overlapping a little so they were ready when I pulled them out to roll up.
Chop cabbage and pour about a tbs of oil over to soften up with a little salt. I added the black sesame seeds here. Put this in the dehydrator for about an hour to soften up as well. For extra flavor add a little soy sauce here. I just squeezed a little lemon on to help soften it up.
Put carrots on dehydrator tray rolled in a little sesame oil and with a little salt. Dehydrate for 1- 2 hours to soften up.
Peel cucumber and cut into juliened slices about an inch long. coat with a little sesame oil and or soy sauce.
After the zucchini comes out put small amounts of cabbage, one carrot slice, and one cucumber slice on section and roll.
Place in dehydrator for another hour- up to about 4 hours.
Add other fillings if you so desire. Some kind of dipping sauce would be nice. There is a sweet and sour one on this site that would be good to try.
Chopped cauliflower with a few fresh peas, green onion and a little carrot would be a nice side. Marinated cucumber salad would be good as well. Orange juice and ginger with a little agave mixed into a dipping sauce would also be good.
