this is a refreshing mediterranean take on the old nut pates. japanese tomatoes are simply the juiciest on earth! although i havent tried heirloom yet. i love taking pictures of produce!
1 japanese tomato, sliced
1 telegraph cucumber, sliced lengthways
handful of mesclun or spinach
1 portabello, diced and marinated in olive oil and salt/ braggs
2 olives marinated in olive oil, pitted and processed roughly
avocado oil, to drizzle lavishly
micro sprouts, to make pretty
cayenne, a dash
stack anyway you like really. make a pattern:
mesclun, thin cucumber, olives, tomato, repeat.
but always dry ingredients at the bottom and fill the olives in the middle and you get this kick of greekish taste. drizzle everything with avocado oil as finale. season it to your preference.
