2c walnuts soaked
1c sunflower seeds, soaked
2 cloves garlic
1/4 c raisins
2 T olive oil
1 c sun-dried tomatoes
1 T chili powder and 1T mexican seasonings
1pinch of cayenne or hot pepper
1 tsp. Celtic salt
2 ears of corn, cut off cob, and 1 red bell pepper, chopped
Process walnuts and sunflower seeds until roughly chopped.
Transfer to a mixing bowl. Blend the tomatoes, garlic raisins, olive
oil, sun-dried tomatoes and seasonings in a Vita Mix. Add the nut and
seed mixture. Stir in corn and chopped red pepper.
