This is a traditional Spanish soup, much like gazpacho. I´ve even heard it called white gazpacho before. Making it fully raw is so easy it´s incredible. The original recipe called for 150 grams of almonds, and I think a cup was about what I used. Garlic can be increased or decreased. I used 4 tonight and it was HOT!! Also use more or less grapes. I LOVE LOVE LOVE grapes in this. Green or Red, but i´m partial to green. Enjoy!!!
1 cup raw almonds, soaked
2 clove garlic, mashed
¼ cup olive oil
2 pinch salt
If you have a Vita-Mix, you are super lucky. I don´t, so this is what I did. Blend almonds and garlic until uniform. Add olive oil to blender and blend again. Add salt and water to the mix and blend yet again until a creamy soup forms. Serve garnished with grapes.
