Another mock tuna

I didn't find a mock tuna recipe using carrot pulp that seemed fast and easy enough, and since I was in a hurry I made my own. Use in sushi, as a spread or pate for crackers, or in a sandwich.

I'm not adding a picture because we all know what mock tuna looks like. It looks like tuna!

Ingredients: 

1/4 cup walnuts
1/4 cup sunflower seeds
1/2 white or yellow onion, cut into chunks
1/4 cup lemon juice
1/4 cup nama shoyu (feel free to omit, but do substitute another liquid, even simple salted water)
1 tablespoon dulse flakes or to taste
1 teaspoon dried dill or to taste (I had no fresh dill in the house but you should use it if you have it)
About 3 cups carrot pulp (based on eyeballing what we had)
1/4 cup parsley leaves

Preparation: 

Blend nuts, onion, liquids, dulse and dill (everything but the pulp and the parsley) in a food processor until mostly smooth.

Then add carrot pulp and pulse to combine. Taste and adjust for seasoning - I added another splash of lemon.

Add parsley at the very end and pulse - you still want some flecks of green in there.

I just made this its great! I added some garlic and olive to it too and it turned out really yummy.

i like that you use dulse to season this, and that you give an option besides nama shoyu. i can't wait to try this!
