Asparagus Basil Pesto Pasta with Italian Sausage Seasoned Walnuts
I have been reminiscing about my stay at Tree of Life last spring and all the wonderful aspargus dishes we had. Here is my inspired dish. I hope you enjoy as much as we did.
4 Zucchinis, jullienned or spiralized
1/2 lb fresh asparagus
1 large bunch of basil
1/4 cup of pinenuts
2 large garlic cloves
Italian Sausage flavored Walnuts
2 cups soaked and dried walnuts
3 t paprika
1/2 t garlic powder
1 t sea salt
1/2 t fennel seed
1 t freshly ground black pepper
1/4 t crushed red pepper flakes
First lightly salt zucchini and set aside to soften.
Second in a food processor pulse pinenuts until finely ground then add asparagus and garlic. Pulse some more. Add basil last and enough olive oil to make a nice paste and pulse until totally combined.
Clean out food processor to start walnuts. Add soaked walnuts and all spices togather in food proccesor and pulse until you get a ground texture.
Drain any liquid off the zucchini and top with pesto and sprinkle with spiced walnuts. Enjoy!
