Avocado Mayonnaise
This is a lovely creamy, tangy nut-free mayonnaise.
I don’t like the taste of nut mayonnaises and after some research and practising, came up with this very simple mayonnaise using
avocado.
It has the same consistency and a nice tangy taste.
It really hits the spot for me with the creaminess and likeness to mayonnaise.
Other cold pressed oils can be used and other ingredients added. Experiment! Let
me know what you come up with =)
1 Avocado
Juice of half a lemon
Up to 50ml water
Up to 100ml Cold
pressed olive oil
Add avocado and lemon juice to a blender.
The avocado may not mix in the blender to start with, so add very small amounts of water to get it going. Once the avocado is mixing well and moving around the blender stop adding water.
Start to add the oil slowly. Keep the oil drizzling into the mixture slowly.
Stop occassionally to check the consistency. Stop mixing and stop adding oil when it is at the consistency you like.

yay! ... i did this mayo ... so good!! :)
my first successful raw recipe ... although ... i didn't have olive oil so i ended up using grape seed oil instead ... well, that's life :))
i'm just spreading the avomayo on my slice of raw bread that my hubby made along with his raw quiche!! hehe ... life is GREAT! xoxo

Thanks, cheerydeb! That's REALLY nice to know that avocado and olive oil are okay to mix, since I've been doing it a lot, lol. I usually try to combine my food pretty well, but I mix dried fruit and nuts a lot sometimes, and stuff like this. it's soo worth it.

Poo on food combining - I know lots of people swear by it, but I just eat whatever feels good to my body, and I have never gotten gas, indigestion or any other problem from combining lemon and avo, or lemon and oil, or avo and oil... eat what works :)

Hiya RawKarateGirl, mine kept in the fridge for 2 days until I'd eaten it all.It would likely last up to 3 days as long as it's kept in the fridge.

I think food combining is important to think about, but If you want something that tastes good and will stop you form having the processed variation, then combining some things that shouldn't be, I think, is totally awesome, and all in all you might just have a little gas :)

Hi rachel_akiko, I followed food combining for a good while and the chart I used put avocado and olive oil in the same group. Using the lemon is bad food combining, but it is only a small amount.
I know this is a very fatty food, however I have lately been stuggling with raw and been having massive junk food cravings (I've been raw a just a year). Although I haven't fallen of the wagon yet, this mayonnaise and other fatty recipes are really getting me through! They leave me feeling full.

Mon46: I don't know how it would work with wasabi. Perhaps you could make the mayonnaise and test a small amount of it with wasabi.

JoyceH: I believe 100ml is about 3 1/3 ounces. Does this sound right?

1 cup is 250ml, 1/2 cup is 125 ml, 1/4 cup is usually given as 60ml but is a titch more. 1tbsp is 15 ml. Personally I just wing it. I'm from Canada and we are ostensibly bilingual for metric/imperial, but as I am of a certain age I usually use metric for some things and not others. Good luck. I have a half an avacado just dreaming to be mayo!!!

even thou I did live in Ireland and had to deal with the metric system.....
can anyone tell me how much 100ml of olive oil is equal to in US measurements. Darn! I through out my Irish measuring cups and stuff when I moved back to the States.

Uhhh..that sounds great. I just had a "fake" Hamburger tonight with some lettuce and tomatoes and that would have been perfect on top of it. Will try next time..probably tomorrow...lol..I have leftovers...yeah!!!
