Banana lovers will dream of this sweet crispy treat. All the characteristics of a classic dessert/candy but with all the nutrition of a RAW snack. Dates, oats, and almonds complement the sweet flavor of bananas. Great as a workout recovery snack or as a dessert.
1 bunch of ripe banana's
1c soaked almonds
1c diced dates
1c raw rolled oats
Soak your almonds the day before, rinse and roughly chop them, finely dice dates to little pieces and set aside, put everything [but the dates] in a bowl and use a stick blender, or potato masher, until it's as rough or as smooth as you prefer. I dumped the mixture onto a sheet of parchment paper [or use a fruit leather tray liner for dehydrators] and wet my hands with water so I could spread the mix without it sticking to my hands. Place the date bits evenly on the top of the mixture, use your hands to gently pat the date chunks into the mix, so that they are lightly embedded in it but not totally submerged into the mix [their dark amber color is so pretty when your done]. Your spread mixture should be at least 1/4 inch thick. Once the first side is leathery enough to peel off the paper or fruit leather sheet, flip it , then you will want to use a pizza cutter to slice it into your preferred shapes. Continue to dehydrate. It gets super dark due to the banana, but the flavor is fine. Dry till a piece snaps when you bite it, not sure how long this takes in a dehydrator as I am still using an oven [dehydrator is in the mail]. I store these types of foods with a tiny container of desiccant [like the kind you find in your herb/vitamin bottles, I reuse them] to absorb moisture to maintain crispness.
