banana ice cream or banana popsicles
i know there are lots of ice cream recipes out there, but this is just too simple not to post.
For ice cream:
Put frozen bananas into a food processor and process until ice cream consistency. About 1 minute for ice-cream-scoop-type ice cream, 2 minutes for soft serve. (in my
processor on “4”.
This is a great base for lots of flavors, just add fruit, shredded coconut, coconut butter, carob chips, whatever you like!
No Processor? No problem! Make popsicles!
For popsicles:
Peel bananas. Stick a popsicle stick 1/3-1/2 way into each banana. Freeze until firm. YUM!
You can dress these babies up by rolling in agave and then coconut, carob chips, crushed nuts…or all of the above, then freeze and enjoy. Kids LOVE THEM! (I have a 2 year old that eat about 2-3 frozen bananas a day, just plain. I wrap one in a kitchen towel and let her have at it!)
