Blueberry Lemon Tart Smoothie
I love blueberry lemon tarts or any type of blueberry lemon desserts. This smoothie satisfies my craving and is super nutritious!
1 cup Frozen Blueberries
1½ Bananas (Frozen or Fresh)
1
Lemon
1 Avocado
1 cup Water
4 Kurly Green Kale Leaves (if you want, can be omitted)
1 pinch Sea Salt
2
tablespoon Agave Syrup
Remove Kale Leaves From Stem and place in VitaMix. Place all other ingredients in the VitaMix except for the Lemon [Kale is optional, you can substitue other greens or leave it out completely, I like to get as many greens in my smoothies as possible].
Cut peel and pith (the white part) off of the lemon and segment it. Place segments in the VitaMix, making sure not to include the seeds b/c they are bitter. Pour into the VitaMix any excess lemon juice from the cutting board and squeeze in any lemon juice from the flesh that accidentilly got cut off w/ the peel.
Start blending on low and increase speed. Blend until smooth, making sure there are no chunks or bits of green left. It should be smooth and creamy.
[Note if not using frozen fruit, include some ice cubes so it does not get warm and nasty]

I've never tried a blueberry/lemon combo, but I bet it's awesome and tangy and sweet... can't wait to try it once I'm off the master cleanse.

I love this flavor combo, I will definitely try it. When I use lemons in smoothies I use a paring knife to peel off the outer peel and then throw the whole thing in (same with limes and other citrus). I've read that the pith and seeds are actually really good for you and the Vitamix should blend them completely smooth so you don't taste them. I agree that lemon seeds are not very nice eaten whole, bleah.
