Broccoli Slaw
This salad is a staple at our house. You’ll find it’s really easy to “tweak” with ingredients that you have on hand.
6 broccoli stalks (enough to make 4 cups), peel and run through food processor or grater to make shoestrings
1 cup broccoli
florets
¼ cup grated carrots
.125 cup shredded red cabbage
.125 cup raw sunflower seeds, soak overnight. May put in dehydrator for 4 hours to restore
crunch.
¼ cup dried cranberries (or other tangy dried fruit of choice)
1 cup almond mayonnaise (recipe follows)
1 tablespoon (or equivelant)sweetener of choice.I've used maple syrup and
agave.
1 sprinkle celtic sea salt (optional)
Prepare sunflower seeds ahead of time. Make almond mayonnaise. Place ingredients in bowl, mix well and enjoy! Just add enough of the almond mayonnaise to hold it together, you be the judge….You may want to add a little vinegar for more zip. We’ve also added minced red onion…. We eat this plain, on top of greens, as a tortilla filling, such possibilities!!

I made this with a dressing of mashed avocado and orange juice instead of the almond Mayo and it was equally delish

I forgot to mention that you could add lemon juice instead of vinegar if you wanted!
