This is a really good way to use up the tough stalk of your broccoli and avoid throwing it away. It tastes surprisingly like traditional cabbage cole slaw. If you prefer cabbage, this dressing is really good on that too!

Recipe Directions

Whisk the first 7 ingredients together in a bowl. Feel free to adjust the ACV, Agave, Oil, and seasonings to suit your tastes. These measurements are just approximately what I like the proportions to be. Add the shredded broccoli stalk and the shredded carrot, mix well. This tastes best after it has set in the fridge for a couple hours or overnight!

I've never used the stalk of broccoli before, do I just peel the tough skin off? The recipe sounds extra tasty!

Was just going to pick a red cabbage. Will use this recipe for it. Going to put kelp noodles on the side.

I just cut off about 1/2 inch of the bottom where it is dried out, but I use the rest except the florets. I just grate it in a food processor or cheese grater.
