Recipe Directions

Just toss all the ingredients together, chill for an hour or so, and you’ll have a nice little meal. If you can get the beans, tomatoes and corn fresh without being canned, all the better.

Rivenrock's Thoughts

By rivenrock

This is a fine dish for a filling lunch. Add some salt and pepper to your tastes. I’d also usully add some pine or other nuts, coarsly broken, and some peppers of a type that you like… for me nothing beats jalapenos.

This sounds delicious but canned beans are cooked. Frozen corn(commercial) has been blanched and is also cooked. Do you have a raw version of this you've tried?

Beans are hard (literally!) to eat raw. Kidney beans are actually toxic raw. Take a look around at the recipes on this site to get an idea of raw ingredients.
