Cactus Fruit Cooler
I recently went to the farmer's market and bought two cactus fruits. I've also seen them at Mexican markets. They taste like a cross between a melon and a pear and usually are pink or yellow. They were full of hard seeds so I blended them and made this delicious non-acoholic cocktail!
2 cactus fruit
1 cup young coconut water
squeeze of lime
Cut the cactus fruits in half and scoop out the fruit. DO NOT EAT THE SKINS!!!!!! Just the insides. Add the fruit and coconut water to a blender, blend, and then strain through a sprout bag. You don't need to blend too long 10-20 seconds should
do in a Vitamix. Finish with a squeeze of lime. Delicious and refreshing and I didn't miss the alcohol. In case you don't know how to open a young coconut, I made a webpage with step by step directions:

Enjoy!
