Cantaloupe, Ginger, and Coconut Soup

Had this at a restaurant in Moab on a hot summer afternoon. It was absolutely delicious. I’ve modified it a bit to make it raw.
Ingredients:
1 Large Melon (2 lbs or 900g), (peel and remove seeds)
3/4 or more Tbsp. grated ginger, (or more to taste)
1 Tbsp. Fresh Lemon Juice,
(or more to taste)
1 tsp. Agave Nectar
1/2 Cup Coconut Milk
Pinch of Sea Salt
Chives for Garnish
Preparation:
Blend all (except chives).
Original recipe uses whipping cream instead of coconut milk. I suppose you could try using a heavy almond cream or something. It suggests stirring in after the
mixture has chilled for 30 minutes.
Either way, it’s delicious chilled.

This was very nice. I used almond milk, as it's what I had on hand, and omitted the salt. I also drank it as a smoothie. I'll be making this again, but with coconut milk. I think it will be even tastier with that flavor. I also left off the chives, but may try it next time as well.
