Carrot Cake
Lovely cake using the goodness of carrots. Great for Halloween!
3 apples
1 banana
1/2 cup soaked apricots
2tsp all
spice
1 tsp ground ginger
2 carrots, grated
dash salt
1 cup buckwheat or spelt flour or ground sunflower seeds
Put all the ingredients except the carrots into a food processor. Process until creamy. Mix in the grated carrot and spread mixture onto teflex sheet and form into a large square or use spoonfuls to make individual sized buns. Dry at 145 for an hour or two, then flip over using another tray lined with teflex, peel back the original teflex. Dry until firm on the outside and reasonably ‘cooked’ on the inside. If drying more than 3 hours turn down dryer to 115 (as recommended by Gabriel Cousens)
Make an icing using your favourite nut cream OR blend an orange, 2 bananas, 1 dessertspoon coconut oil, pinch salt, agave to taste, vanilla adding enough water to create desired thickness. Cover the cake and decorate with poppy seeds or seasonal fruits, whatever you want. Enjoy!!

Could I use pulp from the juicer and maybe just add some honey or something like that to it?? Also, would wax paper work for the teflex sheets. I do not have any.

Hi everyone, thank you for your comments. It is really easy to make! I've been making variations quite often! Great with banana custard. Linda, I found teflon sheets in the supermarket, they are a substitute from the traditional ones you might buy but do the same job. They were alot cheaper too!

Sweetpea, just curious about the dehydrator sheet you are using. I don't recognize the one in your picture as the typical teflex sheet. Have you found something non-teflex to use in your dehydrator? Love the recipe idea, can't wait to try it out!

If you have a gas oven that has a pilot light, check the temp in it. Or if your oven has a light in it, turn it on and check the temp in a few hours to see how warm it gets. Use an oven thermometer that can stay in the oven when it is on. That way, you don't need to open the door to check it. Not the most efficient of ways to dehydrate, but may work.
