Recipe Directions

Chop the cauliflower and set aside.

To prepare the sauce: Place all the ingredients in the food processor and process until completely smoothe. Add water as needed to bring the sauce to the consistency you want. I made mine in the Cuisinart, but you could use a blender just as easily.

If you have time, you could put this in the dehydrator for 1/2 hour. I scarfed mine down as soon as I made it.

Add the sauce to the cauliflower, mix well, add your desired garnish, and serve.

Hearty and filling. The salt, garlic, and yeast makes this taste like real cheese.

Rosita, Glad you liked it.

Estaban - You could try Brewer's Yeast instead. I have no idea how it would tase.

This sounds interesting and very tasty if it is what I imagine - I can't get cashews here, what would be the second-best nut to use? Sunflower seeds? or almonds? Pecans?

Second best would be pine nuts or macadamia nuts.

i haven't tasted it, but instead of cashews i'll usually use sunflower with a little pine nuts thrown in.
