Cheesy Cauliflower with Cucumbers
Submitted by skystrdust on April 2, 2008 - 7:52pm
I really wanted something crunchy and cheesy…so I made this up and it tasted so good that I thought I’d share!
Ingredients:
1 cup diced cauliflower
2 tablespoon raw cashew butter
1 dash paprika (or bell
peppers)
1 dash onion powder (or chopped onion)
1 dash sea salt
1 cucumber
Preparation:
Chop up the cauliflower however big you want it and warm it up for a few seconds on the stove.
Toss the cashew butter, paprika, onion powder and sea salt (to your taste) in the blender
with some filtered water. Blend until it’s really creamy. Pour the “cheese” over the cauliflower and then decorate your plate! :) I sliced up cucumber and garnished with some parsley.

This was really good the next day, overnight in the fridge did wonders, made it taste like cole slaw, in which case some walnuts, raisins, shredded carrots, and apples would be great additions. I used the real onion, maybe a bit extra but it was DELIGHTFUL!
