cheesy kale chips

This recipe makes identical chips. I found it over on Rawfoodtalk.com, thanks to Rawknitster!! http://www.rawfoodtalk.com/showthread.php?p=494315&posted=1#post...
They are so fantastic I wanted to make sure everyone knew about them.

Ingredients: 

1 large bunch of curly, green kale, washed, large stems removed, torn into bite size pieces

COATING:
1 cup cashews, (soaked 2 hours)
1 red bell pepper, seeded and chopped
juice of 1 lemon
2 t. agave (optional-I don't add, I like them more salty + savory)
1 T. nutritional yeast
1/2 t. himalayan pink crystal salt (use more or less to taste)

Preparation: 

Put coating ingredients in Vitamix. Blend until smooth. Using your hands, massage coating onto kale pieces getting it inside of curls. Put on teflex sheets (don't worry about flattening them, they're better bunched up) and dehydrate at 105 overnight or until coating is dry. Slide onto mesh screens and dehydrate 12 hours, or until very crispy.

** note: mine just took about another 4 hours after overnight and flipping. YUM!

Hi Sv3, I haven't updated my blog since Dec 09. I ended up doing so much more skiing and other outdoor activities this past winter that I didn't have much time to blog and make as much fancy gourmet raw food. The funny thing is that going raw vegan healed my chronic knee problems of almost 2 decades. I couldn't even ride a bike for the last decade. So now I'm skiing, running, cycling, hiking all the time now, especially on the weekends. I even invested in a really nice mountain bike as I feel confident I'll use it all the time now. Thanks to raw vegan food, I'm so much more active and pain-free. The only downside is that I'm spending more time outside than in the kitchen. But I'm still making yummy stuff when I can. Thanks for asking though. I'm glad you enjoyed my weekly posts. It was a blast making all that food last year :-)

These are amazing! I modified the recipe very slightly but used all the ingredients! Even my picky husband who doesn't like kale, loved these. I'm making more tonight!! The hardest part is trying not to eat them out of the dehydrator!

4. Can you do this in an oven on

Can you do this in an oven on lowest setting if you don't have a dehydrator? It works for bay leaves for me, but I lose some of the green. Thanks! Love these!

I highly recommend these! When I made them, I didn't have the recipe in front of me, so I did what I remembered and then added a couple of things. I added a few sundried tomatoes, a pinch of cayenne, more nutrional yeast and left out the agave. I took them to work and let a few SAD eaters try them. One loves vegs, one eats only stuff from a drive thru and the other eats almost no vegs. They all LOVED them. I am going home to make a million more. Salty snacks without a ton of fat have been the one thing i've missed in my 2 years raw. I used to be a popcorn junkie.

I'm new to the raw diet, and these are a real staple for me. They're SO satisfying. I use less cashew and add tomatoes and more nutritional yeast.

Oh, and when I put them in the dehydrator, I make sure they're folded over and/or stacked about 3-leaves thick. That lets me get two bunches of kale to fit into my dehydrator (for which I obviously need to order more trays), plus I like the thick crunchiness that results :-)

10. Another variation, and DH

Another variation, and DH said they were the best so far. Here's the coating recipe:

1 cup cashews, soaked
1/2 yellow bell pepper
1 large jalapeno
3 tablespoons nooch
Some salt
Juice of one lemon
1 1/2 cups of cilantro leaves

The coating will be a pretty light green color.

I LOVE LOVE LOVE this recipe. I've been playing around with the ingredients.
My latest is
1/2c cashews
1 red bell pepper
1 stalk celery
5-6 baby carrots
2-3T nutritional yeast
1/2t sea salt
few shakes cayenne pepper
juice of 1 lemon

This tastes like nacho cheese to me... but better. And I was able to cut down the nut level with the extra veggies/yeast. I usually distribute over 1 and 1/2 bunches of curly kale. (I've never used the dino for this so not sure how that would work)

I also don't mess with the teflex sheets. I just bunch them on the dehydrator screens. (I remove a rack in between). I turn the racks 180 degrees after a few hours. They're done about 8-10 hours, or less depending on how you lay them on the screens.

Mmmm Mmmmm Mmmmm. Even my SAD mother (who's favorite opinion of my food is 'gack' lol) LOVES them. now THAT'S saying something. ;)

Hi guys, I have tried chard and dino kale before and the plain curly kale makes the best chips in my opinion. I always skip the agave too.

I would try spinach or chard, or even beet leaves. I used russian kale, we dont have dinsaur kale, I think though it works better on thin leafy greens.

Made these without the nutritional yeast (as I didn't have any) and they are really good!
Did a big batch (after looking at the other glowing comments!) and still have some left.
I'm keeping them in the fridge in an air tight container - how long do you think they'll last for?

Wonderfully tasty!! I had these on my favorites for so long I can't believe it took me this long to make them.So anyway I took them out of the dehydrator at 9 pm yesterday took a small bag of them to work, and when I got home in the morning, my husband and three teens had finished them off! So tomorrow I make a triple batch. Great way to get some extra greens in the kids that they will love to eat.

I wouldn't add the agave, they seem to already be naturally sweet! These are dangerously addictive! I just got off a 14 day juice fast, so I gotta be careful! Too tasty!

I was so excited to try these, I added the recipe to my favorites before my dehydrator even arrived. I made them last week and had the chance to taste-test them against these

And the homemade ones won unanimously! Even my SAD mom and stepdad loved them.

Then I made a new batch, omitting the nutritional yeast and with only half the red pepper. I added a serrano chili pepper and about a half-cup or so of cilantro leaves. They are fantastic! More of a "spicy ranch" than a cheesy flavor - but not too spicy.

Those are really good! The best part is that they are REALLY crispy, I guess because kale is naturally quite thin. Also pretty quick to dehydrate.

I don't have a dehydrator so I bought kale chips from therawfoodworld.com they were out of this world. I ate the whole bag in a day. I shared it with two of my non-raw co-workers and they asked me to order them some.

Looking for a cheaper version? Try it with a mix of sunflower seeds and cashews or just sunflower seeds.
Last time I forgot to add the nutritional yeast, still tasted great.

Don't know about cabbage. If you try it do tell how it turns out.

I think the coating would be good on anything, in fact it's great not dehydrated and on raw flax/corn chips as nachos :) or as a veggie dip. But maybe for chips greens, like mustard greens because they're curly and the coating would get stuck in there. Can you dehydrate broccoli? Cheese and broccoli's always a good combo.
