Chewy Apple-Cinna Cookies
These are nice and chewy! They harden up real good when left out on a plate for a couple hours, either way is really good. This will definitely satisfy your sweet tooth!
1 Cup Walnuts or Hazelnuts
1 Cup Almonds
Approx. 10-12 dates (more for sweeter)
1/2-1 Tablespoon Cinnamon
1 Teaspoon Vanilla
Half an apple (diced)
In a vitamix (or food processor) combine all the ingredients except the diced apples. This should come out as a thick, chewy texture. It requires some help with a large spoon as it’s mixing because the dates keep it from moving. But do the best you can. Empty into a bowl and add in the diced apples, mix with clean hands perferably. Take a golf ball size of the dough and spread in a cookie shape with your hands and place them in the dehydrator. I sprinkled some extra cinnamon over mine which is optional. Mine made approx. 15-18 cookies but the dough expands really well, so it makes quite a bit. Set temp at 145 F and let it dry for 7 hours, turn them over and repeat for another 7. If you like them extra soft and chewy..about 10 hours would be perfect, more of crisp will need the 14 hours with additional hour sitting out on a plate. Or, you could just adjust your own temp to what you’re used to. I hope you like these just as much as I do!

I make these quite often and I don't soak the nuts first. I believe that these can be made without a dehydrator, just set them out on a plate for a few hours so they harden a bit, unless you don't mind eating extremely chewy, sticky and very soft cookies.

Did you or did anyone soak the nuts or dates first? Has anyone made these without a dehydrator? has anyone made these WITH a dehydrator, and if so, what temp did you set it at? I am making these tonight but not sure if i should soak anything...

Maybe 145 for an hour then drop it to below 115. Anything over an hour above 118 and you'll probably kill everything.

Uh, "set temp at 450"??? I'm assuming this is a typo..... Otherwise, they sound (and look) quite tasty!
