Salsa isn't that hard to make and this one has a beautiful cacophony of flavours!
2 Large Organic Tomatoes
1/4 Large Organic Yellow Onion
1 Large Handful Organic Cilantro
6 Small Organic Garlic Cloves (or 4 Big Ones)
2 Pinches Dried Organic Oregano
5 Pinches Coarse Sea Salt
1 Tablespoon Extra Virgin Olive Oil
Two Squeezes of an Organic Lemon
Make your own flax crackers or cheat and buy "Mary's Gone Crackers!" flax crackers like me ;)
Chop tomatoes, onion, and cilantro into small pieces. Mince garlic finely and toss in a bowl. Add the Oregano, sea salt, EVOO, and lemon. Stir a few times and let sit for approximately 20 minutes to let the flavors soak in. Grab your flax crackers (I like Mary's Gone Crackers because they're easy and I don't have a dehydrator) and delight in all that is wonderful tasting!

Yes, I love Mary's gone Crackers also. I am not 100% raw, but it's still a good FYI to know which products are raw and which are not.
Marys are great and a 10th of the price of the truly raw brand dont be too strict about it to each his own.
Good recipe we actually made this last night with guac, and some almost raw hummus!
My mistake! I thought Mary's were dehydrated... There's a raw brand that my neighborhood health food store started carrying and I know they have flax crackers - can't remember the brand but if you can't make your own (like me) you can still buy some truly raw ones ; )
I love Mary's crackers, even if they aren't raw...it's okay to not be 100% all the time!!! Awesome recipe :)
