Chips and Yum aka TV Food
I just came up with this – i was watching a cooking show, and suddenly it hit me: i needed to eat tomatoes NOW! Here’s the result. I loved it!! Hopefully you will too!
1 large tomato, chopped into chunks
2 slice onion, chopped up
½ of a small jalepeno pepper (green), diced
½ of a lime, squeezed
½ avocado (or all of it), chopped into chunks
1 dash sea salt
1 cucumber, sliced legthwise (8 pieces)
2 cloves of garlic, crushed/ diced
take the tomato,lime juice (squeezed), 2 slices of chopped onion, jalepeno, garlic – ah ok you get. Everything but the cucumber and place in dish. Stir. Ok, now the cucumber – slice length wise, and into 8 pieces. here’s the fun “TV food” part; cut the “meaty” part of the cucumber out (but not too thin!) and chop up and add to the mix. Now you have “cucumber scoops!” veg out and enjoy!
