Zucchini is the base of this lower fat pudding
1 zucchini peeled, chopped
2 TBS carob powder
1/4 of a frozen banana in chunks
about 1/4-1/3 cup young thai coconut meat
1 tsp vanilla
pinch of salt
Place all ingredients in vita mix/high powered blender and blend until smooth. This is ready to eat right away but will firm up a little more if you put it in the fridge for an hour or two.
It's great that you've provided a lower fat version here. Zucchini is not something I would have thought of as an ingredient for chocolate pudding. But then again, I use to love chocolate zucchini bread. Thanks for this nut-free variation.
