Chocolate Thin Mints

Chocolate
* .5 C melted Cacao butter
* .5 C melted coconut butter (for a firmer thin mint, sub coconut butter/oil with cacao butter)
* .5 C maple
syrup
* 1.5 C cacao powder
Mint mixture
* .75 C dehydrated coconut
* 1.5 C packed coconut meat
* 3 T coconut butter/oil
*
1 T maple syrup
* 1-2 packets of stevia
* 1.5 tsp mint extract
* .5 tsp spirulina (coloring agent)
Chocolate:
Stir all ingredients together in a bowl that is placed over a large pot of hot water. Set aside.
Filling:
Blend all ingredients together until smooth. If need be, you may need to add a bit of water to keep contents in blender moving.
Assembly:
Paper or silicone mini-baking cups
Line a miniature cupcake pan with baking cups. Pour a small amount of chocolate in the bottom of each cup. Next, drop a small amount of the mint mixture on top of the chocolate layer. Cover mint mixture with more chocolate sauce. Once all cups have been poured, place in freezer to firm.
Viola - you’re done!

Sorry, Delore - just now seeing your question. Well, it depends on what type you have. If you're using the Stevia in the raw (that comes in the big green bag), you will need quite a bit more because it's fluffed (if that makes any sense). However, if your stevia is pure (no maltodextrin) then about .5 tsp per packet. Hope that helps!

How much is in a packet of stevia? I just have the powder in bulk so I'm not sure how much I should put in. Can't wait to make these! :)

Thanks - Like the girl scout cookies, but ohhh so much better :) Also, you could always press a raw chocolate almond dough in the bottom of each cup, the layer mint, then chocolate - that would give it texture similar to that of the cookies too!

I logged in to check the forums and saw this pic on the front page. I had to comment because these look spectacular! The pic reminds me of the Girl Scout Thin Mints I used to eat when I was younger (and weighed a lot more, heh!) I'm definitely going to try them soon.
