Very juicy and flavourful. I mixed it with vegetable-peeled cucumber noodles.
2 red bell peppers
3 cup grape tomatoes
½ lime juice
1 stalk chopped dill
½ clementine juice
1 stalk chopped elbow-shaped celery
1 tablespoon chopped chives
Cut cored peppers into 1/2 inch strips. Combine all ingredients except the chives and celery and pulse in food processor until roughly mixed. Stir in the chopped celery (maxes it slightly salty and more filling) before pouring mixture over cucumber noodles. Garnish with chives and enjoy.
