Creamy goodness. I like to have this for breakfast, but it could easily be a dessert as well. I adopted this from Rainbow Green Live Food Cuisine's coconut smoothie.

I just wanted to add that this morning I used Vanilla extract instead of orange oil and it came out soo good. I wasn't able to use my vita-mix this morning so I used my magic bullet and it has the texture of cream of wheat - it even tastes kinda like cream of wheat.

Good morning :) Did you use coconut water or just plain water? This sounds good! I've been missing yogurt, but don't want to always rely on nuts to make creamy foods...love coconuts!

I use regular water, not the coconut water - but you could use either. I didn't use a young coconut because the mature coconuts have more meat (so I am told - I actually just used what they had at the health food store). If you use a young coconut let me know how it comes out.

Try asian markets. I'm not from New York, but that's where I find them in Louisiana. I'd imagine you could get them in NY if I can find them here in South Louisiana. A lot of times, at the different markets that I go to, they keep a lot of cold stuff in big walk in fridges where you can't see them so you have to ask. Good luck!

I would assume it's a young coconut, are you using any of the water or just the meat?

Sounds delicious. I'm ordering a case of coconuts this week. Is this the meat of a young or a mature coconut?
